Sweet Potato Pizza Casserole

I must apologize.  I didn’t get a picture of a nicely plated serving of this yummy dish.  This happens to be the serving I set aside in a Tupperware for my husband’s lunch tomorrow.  What can I say?  It was yummy, and we all just wanted to eat it.  This dish is great because not only is it yummy, but it is also very budget friendly.  It’s my go-to dish when money is tight.  Still, it captures the flavors of pizza, so the kids have no idea how frugally they are actually eating.

Ingredients:

1 carton sliced mushrooms

2 green peppers, chopped

1/2 red onion, chopped

1 tomato, chopped

3/4 lb ground beef, cooked

1/2-3/4 cup pizza sauce (one that fits your dietary parameters)

2 sweet potatoes, baked and mashed

3 Tbsp butter, melted

1 garlic clove, chopped

Directions:  Preheat oven to 350′.  Lay sliced mushrooms across the bottom of a 9″x13″ pan.  Cover with chopped green peppers, red onion, and tomato.  Top that with the cooked ground beef.  Place spoonfuls of pizza sauce randomly over the top and lightly spread with the back of the spoon (you can add an egg to the sauce before adding it to help thicken it while it cooks).  In a medium-sized bowl, mash sweet potatoes, butter, and garlic.  Spread the sweet potato mixture on top of the pizza sauce (you can add cheese on top if you wish).  Bake for about 40 minutes.
