Tropical Coconut Lime Chicken

I bought chicken thighs, again.  I just can’t get over how much cheaper they are than every other cut of chicken.  Puts a smile on my pocket book every time! I decided to try something different and go tropical.  I’m all about refreshing summery flavors in the summer, and heartier flavors in the fall and winter.  The result of my tropically topped chicken was a nice exotic, zesty dish that everyone loved.

Ingredients:

6-8 chicken thighs

1 lime, thinly sliced

1/2 inch slice of red onion

1/4 cup honey

1/2 cup full-fat coconut milk

1/2 tsp salt

1/2 tsp cinnamon

6 mint leaves

It should like this when you’re ready to put it in the oven.

Directions: Preheat oven to 300′  and lay chicken thighs out in a 9″x13″ pan with the skin up.  Spread lime slices over chicken.  Separate onion rings and spread them over chicken.  Drizzle with honey and coconut milk over chicken.  Sprinkle with salt and cinnamon.  Lay mint leaves over chicken.  Bake for about 1 hour.  Broil 3 minutes to help crisp skin.  Allow to cool about 10 minutes before serving.
