REAL, FRUGAL, HEALTHY, and FUN!!!
My husband loves when I make my chili. It’s hearty and delicious. I can make a huge batch, put it in the crock pot and he can eat on it all day, at his leisure. It’s such a heart-warming, comfort food.
28oz can chopped stewed tomatoes
6oz can tomato paste
2lbs cooked ground beef
8.25oz can creamed corn
12oz jar sliced jalepenos
1 sweet potato chopped
2 cloves garlic chopped
1/2 red onion chopped
2Tbsp chili powder
1tsp garlic powder
1tsp black pepper
Directions: You can literally just throw all of the ingredients into a medium saucepan, bring it to a boil, and let it simmer for about an hour. Or, you can throw it all into a large crock pot and leave it on low for at least 3 hours. That’s literally all you do. It tastes so hearty and wholesome, and it is, but it is incredibly easy to make.
I used to make my chili with beans. If you eat beans, feel free to throw some in. I choose not to eat beans very often because they irritate my digestion. Beans contain a defense mechanism called lectins. Lectins are actually a protein in the plant which can cause intestinal distress in hopes of deterring predators from returning for more. You’ve heard the poem:
Beans, beans, the magical fruit,
The more you eat the more you toot.
The more you toot,
The better you feel.
Eat beans for every meal!
Lectins are responsible for the infamous gassiness associated with beans. They can cause diarrhea, nausea, bloating, vomiting, and even leaky gut. Like gluten, lectins are tolerated by some people and not at all by others. If you tolerate beans just fine, go ahead and add some in. They are a great source of protein and fiber.
