I love spaghetti squash!  There is so much you can do with it.  You can pretty much make any pasta-type dish with it.  Oh, but lesson learned; a while back, I tried making something with spaghetti squash in the crock pot.  That did not go well.  It was soupy.  I don’t recommend it.  I like baking casserole-style pasta dishes with it in the oven.  Here’s a crowd pleasing pizza-style casserole.


1 medium-size spaghetti squash

2 Tbsp olive oil

1/2 lb ground turkey

3/4 cup mushrooms, chopped

1/4 cup onion, chopped

2 cloves garlic, chopped

1 green pepper, chopped

8 oz tomato sauce

2 egg yolks

1/2 tsp salt

1/2 tsp pepper

1/2 tsp oregano

1/2 tsp basil

1/2 cup shredded parmesan cheese

Pepperoni for garnish

Marinara sauce for serving

Directions:  Preheat oven to 350′.  Cut spaghetti squash lengthwise, scoop out seeds, place in pan facedown, and bake for 45 minutes (leave oven on to bake casserole).  Allow it to cool.  In a skillet, on medium-heat, heat olive oil and cook ground turkey.  Add mushrooms, onion, garlic, and green pepper.  Once it’s all thoroughly cooked, turn off the heat an add the spaghetti squash.  In a small bowl, whisk together tomato sauce, egg yolks, salt, pepper, oregano, and basil.  Pour sauce over ground turkey and vegetables.  Mix thoroughly.  Pour contents into 9″x9″ pan.  Sprinkle with cheese and garnish with pepperoni (as many as you’d like).  Bake for 30 minutes (uncovered).  Allow casserole to cool for 10-15 minutes before serving.  Serve with marinara sauce.

    Do you add the spaghetti squash to the the meat mixture? Sounds yummy thanks for posting.
