I amaze myself sometimes! This was so good! I had it for lunch, but I’m posting it under breakfast for obvious reasons. If you haven’t noticed, I love recipes that I can quickly cook up in a mug in just a few minutes. Check this out. It didn’t take any longer to make the English muffins than it did to cook up the bacon and eggs. Literally, while the bacon and eggs were cooking, I was able to mix up the batter and cook my English muffins. Then, because my skillet was already heated up, I decided to toast them.
Almond Flour Variation
Ingredients:
3 Tbsp Almond Flour
1 Tbsp full-fat coconut milk
1 eggs
Pinch of baking soda (about 1/16 tsp)
Directions: Mix it up in a large mug, or as I used, a glass measuring cup. No need to grease it. Microwave for 2 minutes and 30 seconds. Turn it over onto a plate. Slice it horizontally (width-way). Should make 4 slices. I toasted mine with my skillet. There’s a lot you can do with them at this point. A sandwich, French toast, croutons, bread pudding…

do they freeze well? how did you package them to freeze them for future use.

I’ll be making a larger batch tomorrow. I’ve been asked to test out the option of baking them in the oven for those who don’t have microwaves. When I do that, I’ll attempt to freeze them.

Well, I have since tried them in my muffin pan. It takes about 18 minutes, at 350′. It works, but for some reason the microwave method results in a more bread-like texture.

Is there a substitute for the coconut milk?

Yes, I’ve actually done it with almond milk. When I ran out of both coconut and almond milk, I actually substituted water. It’s not quite as good, as a creamy liquid is best, but even water works in a pinch.

How long would you suggest to microwave it if you double the recipe?

I have not doubled it as of yet. I would suggest trying 3 minutes and 30 seconds, but it may need some adjusting.

Hi just wondering how it went freezing these? Would love to make a big batch and then freeze to take out when I need.

Oh, man! I’ve got to try it and see. You’re not the first person to ask that. I just haven’t done it, yet. I always make them and eat them on the spot. Just today, I had one sliced in half. I made a tuna and avocado sandwich. Tomorrow, I’m going to make an almond butter and homemade strawberry chia jelly sandwich. I just haven’t tried freezing them, yet. From the bottom of my heart, I truly believe they would freeze just great. However, I haven’t done it just yet. I’ll tell you what, though, Emily. Tomorrow, I’ll make 2 and I’ll freeze one. I’ll let you know how it goes.
