Raw Date Caramel

This recipe is super basic, but because of how easy it is, I make it all of the time. There’s so much use for it, so I feel like it’s a great first recipe.  It can be used to top ice cream, pancakes, add to coffee or cocoa, and dip fruit in.  It’s not a sticky caramel. It has a slightly puddingish consistency.  It’s light and delicious.

Ingredients:

1-1/2 cups pitted dates

1 tbsp coconut oil

Water

Directions: Place dates in a small bowl and add just enough water to cover. Allow dates to soak overnight.  Drain the water. Blend the dates and coconut oil until completely smooth.  This takes a few minutes.  Store caramel in an airtight container in the fridge.

Why is this caramel so awesome?

I just wanted to share with you why this caramel blows the other caramels you’ve been eating out of the water.  This caramel helps with constipation,  diarrhea , as well as other digestive irritations.  It’s great for your heart health. Its a delicious source of iron, which is great for anyone who is anemic. It also helps with sexual dysfunction and abdominal cancer. Dates are nutritional powerhouses.  They’re loaded with vitamins and minerals.  Enjoy!
