This recipe is super basic, but because of how easy it is, I make it all of the time. There’s so much use for it, so I feel like it’s a great first recipe. It can be used to top ice cream, pancakes, add to coffee or cocoa, and dip fruit in. It’s not a sticky caramel. It has a slightly puddingish consistency. It’s light and delicious.
Ingredients:
1-1/2 cups pitted dates
1 tbsp coconut oil
Water
Directions: Place dates in a small bowl and add just enough water to cover. Allow dates to soak overnight. Drain the water. Blend the dates and coconut oil until completely smooth. This takes a few minutes. Store caramel in an airtight container in the fridge.

A friend of mine got me onto coconut oil not long ago and we use it for everything now! Love this quick and easy recipe. I will have to give it a try.

Yeah, my husband teases me because I use it so much. I keep a jar in the pantry for cooking and baking, and a jar in the bathroom for bath and body purposes.
